OK - having come to the realisation that this just doesn't seem to be  
possible - even running a Schedule from the FileMaker Server Admin  
console won't include the Save Records to PDF script step - I've  
attacked it from a different angle, and I "think" this is working.

On the Web Publishing Engine machine, I've created an Automator  
workflow that will open FileMaker Pro, log into the database on the  
FileMaker Server machine over my LAN, run the script to create the PDF  
file, which saves to a folder in the  Apache Library/Web Server/ 
Documents/ folder for that site which is the same machine as the Web  
Publishing Engine machine.

Then save this Automator workflow (well it's a single step with an  
AppleScript) as an iCal PlugIn, scheduled to run every day. So once a  
day we'll get an updated PDF file generated and posted to the website.
