On the PC, NoteTab Light

On the Mac, TextWrangler

On Unix, vi (although I haven;t had to edit directly on a server for a  
while, so I think my skills may be getting rusty there...)

But a lot of this is habit - there are probably more fully featured  
text editors out there, but I'm used to these ones...
