I recommend text because it *is* text - after all, a poorly-sighted or blind
person using a screenreader or other assistive technologies won't know
anything about your image that says "processing". And people with
disabilities surf the web and submit forms too. You could go to the trouble
of using image replacement techniques, but in this case it's far simpler to
just put text there.

You will hear some people say "who cares? I don't have any blind users!".
Well, we all have one *very* important blind user: Google. It's important to
develop any website with more than just able-bodied users in mind.
